Ingredients

  • 1 cup fine bulgur wheat
  • 1.5 cup boiling water
  • 1/4 cup lemon juice fresh
  • 1/4 cup extra-virgin olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 bunches fresh parsley chopped
  • 1 bunch fresh mint chopped
  • 3 each medium tomatoes diced
  • 1/2 large onion, (yellow, white or red) finely chopped

Instructions

  • Rinse the bulgur wheat in a fine-mesh strainer, and transfer it to a large
  • Pour boiling water over the bulgur wheat, and stir to combine. Cover the bowl with a clean kitchen towel and let it sit for about 20 minutes, or until the bulgur is tender and the water is absorbed.
  • In a small bowl, whisk together the lemon juice, olive oil, salt, and black pepper to make the dressing.
  • Add the chopped parsley, mint, tomatoes, and onion to the bowl with the bulgur wheat, and stir to combine.
  • Pour the dressing over the salad, and toss to coat. Taste and adjust the seasoning as needed.
  • Serve the tabouli immediately, or cover and refrigerate until ready to serve.
